Mashing and Decoction

Decoction is performed by raising the temperature of the grain in phases and moving it between two vessels. Then, lautering separates solids from the liquid wort. The whirlpool phase promotes clearer wort by capturing solids in the center of the vessel. We use a blend of old-world practices and custom technology to prepare our wort, including a low simmer boil.
