Natural Carbonation

We ferment all our biers under pressure (”spunding”), partially carbonating them in the process. All excess CO2 created is recaptured, cleaned, and used for final carbonation.

By only using CO2 captured from our fermentation process, we can avoid purchased CO2 which often contains impurities and bitterness from byproducts of other industries. This leads to a softer carbonation free of that “CO2 bite”.
