Open Fermentation

An authentic German tradition, open fermentation allows us to collect CO2, monitor yeast health, and scrap unwanted resins from the surface, and sulfur and other by-products to off-gas out of the bier versus being trapped as in modern tanks. 

While a lot of work, this all leads to a cleaner flavor profile for our lagers and ales.
