Open Fermentation

Fermentation occurs as yeast metabolizes sugars into alcohol. Done in the traditional German manner, open fermentation means using an unsealed vessel that is open to the environment. This allows us to collect CO2, monitor yeast health and remove unwanted materials from the surface. Open fermentation was the original method of brewing, and produces a cleaner flavor profile for our lagers and ales.
